Spice Up Your Memorial Day Menu




Memorial Day is this weekend and all of us at Backyard Safari Company wanted to say THANK YOU to all those who have served to help keep us safe!

We know many of you will be getting out your grills, American flags, and backyard games this weekend—but don't forget to start planning your menu so you can actually enjoy your three-day weekend with family and friends too! There's more to it than burgers and hotdogs ya'll and we've made it easier with our recipes below.

Because what better way to kick off this summer than with some new and updated grilling recipes that bring a little spice into our lives? Check out our yummy recipes below and make sure to buy some seasonings for the weekend or just stock up on ’em for the summer! 

Mini Sliders with Toppings Bar

Ok, so you can’t have a BBQ without a burger? We understand. This holiday shrink your burgers but expand your toppings selection!

Use our 3 ingredient burger recipe to save some time, all you need is 2 lbs. of beef/turkey meat, 2/3 cup of your fave BBQ sauce, and our Dinner Tonight! Burger seasoning mix. Serve them on Hawaiian sweet rolls or potato buns and gather up your favorite toppings and sauces so people can make their own yummy creations. Some of our favorites are bacon, blue cheese, onion straws, avocado, pickles, peppers, tomatoes, lettuce, ketchup, mustard, ranch, thousand island. The possibilities are endless!



Grilled Potato Wedges

Everyone loves french fries, especially with burgers, so why not make some grilled fries?! Since you’re already cooking other stuff on the grill, just add them on there too.

Ingredients: 4 large baking potatoes, 1 tablespoon of vegetable oil, 3 tablespoons of Peppered Garlic Seasonings, 1 teaspoon salt.

Cut potatoes lengthwise into 8 wedges. Brush with oil and sprinkle with salt and seasonings. Make sure to use cooking spray on the grill racks. Grill for about 25-30 minutes, turning occasionally. Cook until potatoes are tender.  *Start cooking these first, since they take a little longer on the grill.



Cheesy Spiced Corn

We all love the corn on a stick they sell at state fairs, so why not try it at home? It’s actually pretty easy to make and super fun to eat. Cut the corn in half so your kiddos can enjoy them too!

Ingredients: 4 Ears of Corn, ¼ Cup Mayonnaise, 1 teaspoon Sweet Chipotle Grilling Seasoning, Parmesan Cheese (grated)

Preheat grill to medium-high. In a small bowl, combine mayonnaise and chipotle seasoning. Grill corn, turning occasionally, until tender and has grilled marks. About 10 minutes. Remove from heat, put a skewer/stick in the corn, and spread each ear with about a tablespoon of mayonnaise mixture. Sprinkle with Parmesan cheese and serve!



Grilled Shrimp & Veggie Kabobs

Substitute some fish into your menu this holiday, it’s healthier and lighter so you can enjoy that second helping of dessert if you want. ;)

Ingredients: 1 lb. shrimp (peeled & deveined), 1-2 tablespoons olive oil, 2 tablespoons of Dinner Tonight! Fajita Seasoning, wooden skewers, your choice of veggies (zucchini, peppers, onions, tomatoes).

Put shrimp and sliced veggies into 2 bowls. Drizzle with olive oil, toss to coat. Sprinkle with fajita seasoning. Thread onto skewers alternating shrimp and veggies, or just make all fish and all veggie skewers. Grill for about 5-7 minutes on each side!
